BBQ Chicken Fajitas

Ingredients:

Tortilla shells
Hot Fillers:
- 2 chicken breasts
- 1 pepper (any colour)
- 1/2 purple onion
- mushrooms (optional)
- BBQ sauce
Cold fillers:
- sour cream
- shredded cheese
- spinach/lettuce
- salsa
- mashed avocado

1. Cube 2 chicken breasts and cook in a frying pan at medium-high with olive oil. Add some BBQ sauce for last minute of cooking. Put in a serving bowl.

2. In same pan, cook pepper & onion (& mushrooms if using). Add some BBQ sauce for last minute of cooking. Put in a serving bowl.

3. While the above are cooking, prepare the "cold fillers". By the time the peppers are cooked, the table will be full of little bowls of fajita fillers!

Yummy! And ready in 15 - 20 minutes.
  


Welcome to the Roth Plate!

I was mentioning to some friends that I never cook anything that takes longer than 30 minutes to make during weekdays. I love to cook, but don't have the time or energy (or patience) to spend an hour in front of a hot stove. They said I should write a book.

I don't want to write a book, so I thought I'd create a blog to show you what's on our plates. If you ever need a quick easy dish that is yummy and uses "normal" ingredients, stop on by for some ideas!

I do not take credit for most of these recipes! Sure I change them around, but almost all have come from cookbooks, or are my attempts at mimicking my favourite dishes at restaurants.
